The Awakening of Biodiversity between Pastures and Ancient Flavors
March and April are the months when the Hyblaean countryside transforms into a vibrant carpet of colors and scents. Here at Le Chiuse di Guadagna , biodiversity isn't just a scientific concept, but a sensory experience that begins in our pristine pastures and ends right at the table.
During this time of year, the pastures, regenerated by winter rains, offer their best. The wild herbs that grow between the dry stone walls are not only essential for the well-being of the livestock, but are also true gastronomic treasures that we carefully harvest, following the rhythms of nature.
The protagonists of the period:
Wild Asparagus: The undisputed king of the Mediterranean scrub. Thinner and with a decidedly more intense flavor than the cultivated variety, it's perfect in frittatas or simply sautéed with a drizzle of our extra virgin olive oil. Searching for it among the brambles is a ritual that requires patience and a watchful eye, but the reward is a pure, earthy flavor.

Borage: Recognizable by its delicate blue flowers and velvety leaves, it's pure versatility in the kitchen: excellent in ravioli fillings or fried in a light batter for a crunchy appetizer with a hint of spring.

"Sarchi" (or Aiti): Here we enter the heart of local tradition. Commonly called wild chard, these tender leaves have different names just a few kilometers away: in Scicli, they're "sarchi," while our neighbors in Modica call them "aiti ." They're the heart of peasant soups and side dishes sautéed with garlic and chili pepper.

Wild Fennel: The aromatic soul of Sicily. With its feathery green fronds, wild fennel releases an unmistakable scent that marks the arrival of spring. It is the irreplaceable ingredient for pasta con le sarde or for seasoning legumes, bringing the very essence of our hills to every dish.
