It all begins in our fields. We never rush nature; we wait patiently for the Sicilian sun to bring citrus fruits, figs, mulberries, and prickly pears to their perfect stage of ripeness. It is only then, when the fruit is bursting with juice and natural sweetness, that we proceed with a manual harvest.
Being able to pick a fruit from the tree and bring it straight into the kitchen means working with a freshness and intensity of flavor that no industrial product could ever match.
The Art of Transformation: A Family Tradition
